DEHIDRATED AJI CHILE PEPPER De la Quebrada®

The ají chile peppers are cultivated here at Topará and have the organic certification given by Skal (Holland). This certification guarantees the cultivation of the chili pepper without the use of chemical fertilizers or pesticides, ecologically safe agricultural activity, and care for the environment. The ripe and fresh ají chile peppers are carefully selected and dried in the sun. In the case of the powdered ají chile pepper, the ají chile peppers are dehidrated in hot air conventional ovens and are then ground. The product is then packaged and sealed. It can be used as an ingredient for sauces and condiments, prepared foods, snacks, seasoning, etc.

PICKLED AJI CHILE PEPPER (Sweet and Sour) 
De la Quebrada®

The ají chile peppers are cultivated here at Topará and have the organic certification given by Skal (Holland). This certification guarantees the cultivation of the chili pepper without the use of chemical fertilizers or pesticides, ecologically safe agricultural activity, and care for the environment. The ripe ají chile peppers are picked manually, classified and taken to the production plant. The pickle juice is made of white vinegar, sugar, herbs and spices. The jars are filled with the previously blanched ají chile peppers and the pickle juice, pasteurized, cooled and labelled. For this process only natural ingredients are used; no artificial colours, flavours or preservatives are added. They are ideal for complementing foods, or for preparation of sauces and condiments.

HOT SAUCE  Inca Flame ™

The ají chile peppers are cultivated here at Topará and have the organic certification given by Skal (Holland). This certification guarantees the cultivation of the chili pepper without the use of chemical fertilizers or pesticides, ecologically safe agricultural activity, and care for the environment. The ripe ají chile peppers are picked manually, classified and taken to the production plant. The peduncles and seeds are removed (in the case of the ají panca and rocoto), and are discarded. The remaining ají chile pepper is then liquefied in a homogenous sauce. The jars are filled with the ají chile pepper sauce (previously blanched), pasteurized, cooled and labelled. For this process only natural ingredients are used; no artificial colours, flavours or preservatives are added. They are ideal for preparation of sauces, dressings, BBQs, or simply to complement your foods.

APPLE VINEGAR Die Pappel

The preparation of this vinegar is 100% natural, that is to say, neither sugar nor yeast is used in the fermentation of the apples, nor are any chemical components used for refinement and conservation; therefore, the fruit conserves all of its natural components: potassium, sodium, sulphur, calcium, magnesium, phosphorus, iron, silicon, albumin, free acid and pectin (substance that kills pathogenic organisms and stimulates the growth and elasticity of the tissues, giving the body defenses against disease). Since no chemicals are used, sediment or cream may appear in the bottle; however, this does not impede the continued use of this first class quality product.

The apple vinegar itself can be used in salads, in meat and fish, as a drink, and as medicine for diverse ailments (tonsil inflamation, cavities, hair loss, dandruff, acne, rheumatic pain, ocular irritations, etc.). Following a vinegar treatment with honey - better yet if it's Miel Purita™ - one can also combat other ailments (arthritis, rheumatism, obesity, high blood pressure, cellulitis, cell aging, anemia, constipation, palpitations, etc.).

EXTRAVIRGIN OLIVE OIL Chacra Blanca

The olive oil is a natural fruit juice extract that conserves the flavour, aroma, vitamins and all the properties of the olive, besides being the only vegetable oil that can be consumed directly, virgin and crude. It contains 9 calories per gram, the same caloric proportion as any other vegetable or animal fat. 80% of the olive oil is made of oleic acid, essential for the control of blood cholesterol. Consequently, it's an excellent way to help reduce risk of arterial and cardiac illnesses.

Chacra Blanca Extravirgin Olive Oil is elaborated with select olives, which have been cultivated without the use of any insecticides or pesticides. The cultivation and processing of the "Chacra Blanca" olive trees has the organic certification given by the peruvian company BIOLATINA. The acidity of the product is less than 0.5ş, preserving all of the flavour and aroma of the fruit.

MEDICINAL AND AROMATIC HERBS

A variety of herbs and spices are selected and cultivated here at Topará and are given organic certification by the company Skal (Holland). This certification guarantees the cultivation of the herbs without the use of chemical fertilizers or pesticides, ecologically safe agricultural activity, and care for the environment. We also have medicinal herbs from the areas of nor-Yauyos and Puquio, thanks to the contribution and work of small local farming communities. The herbs are picked manually at their optimum ripeness, disinfected and pre-sun-dried in the shade, achieving a maximum humidity factor of 10%. The cut is made according to the client's requirements. The entire process follows the international quality and microbiological standards.

Some of the varieties are planted by order, especially the less commercial herbs. Therefore, some products require a minimum of 4 months prior to delivery.

FRUIT TREES

At the fruit vivary De la Quebrada ® Topará, we produce thousands of fruit trees annually, under the rigorous supervision of its owner, Engineer Klaus Bederski, with more than 30 years of experience. We have installations of mother plants which guarantee the authenticity of the variety of the scions, and we offer specialized technical assistance to our clients.

We also carry out university studies in situ and varietal development projects. Support is also given to SENASA (National Agricultural Health Service) for its investigation projects, such as fruit fly and citrus fly control, etc.
